Japanese-style shokupan — a soft, pillowy, slightly sweet white loaf built on a cooked flour-and-milk roux called tangzhong. It's the reason a good slice feels almost weightless.
Great toasted with cold butter and jam, split for a proper sando, or torn straight off the loaf at the counter (we won't tell). Every one of ours is baked the morning you pick it up.
We cook a small paste of flour and milk before mixing — it pre-gelatinizes the starch so the dough holds more moisture without going gummy.
Feather-light crumb you can pull apart in soft strands. Golden crust, cotton-soft inside.
A whisper of sugar and a knob of butter. Enough to sing on its own, mellow enough for savory sandos.
Wrapped on the counter it's still tender on day three. Toast a slice with cold butter — that's the move.

We pop up around LA and the SGV. We bake a set amount and when it's gone, it's gone, so come early. Bring a friend, they'll thank you.
No popups on the calendar this week — drop your email in the banner to be first to know.

Early Bird started in a home kitchen in the San Gabriel Valley, with one family, a lot of butter, and a soft spot for Japanese milkbread.
We're AAPI-owned and family-run. We don't have a storefront. We bake in small batches, open orders a few at a time, and meet you at popups around LA. It's slower this way, and that's the point. Every loaf gets our full attention.
This isn't grocery-store bread that sits on a shelf. If you want bread that lasts a month in plastic, we're not your bakery. If you want a warm loaf made the morning you pick it up, you're in the right place.
Get on the list, come say hi at a popup, and tell us your favorite flavor. We'll probably remember.
